How do I set up auto-delete for my contacts to reduce the number? ie if they haven't opened an email in +2 years, remove them from my database

If you are running a recent version of Sugar the Auto-Archiver would be the easier option to accomplish this. 

Just create a new archiver filtering for Date Modified.

It has been a while since I had to deal with marketing in Sugar, how would you know if a contact has not opened or received one of your mailings?  If thats easy enough then the rest is child's play. 

It would have to be done in code though but it sounds like you have a on-site install so that should'nt be hard.

do you also have Sugar Enterprise?
if so, archiving feature is also available for that version
