Aging leads

A possible way to do this is to create a Summation Report  on the Leads module grouping by Week:Date Modified.

If you add the Lead Count to the Display Summaries you can generate a Graph with the leads grouped by Last Modified week. 

If you are looking for more granular info, you can also group by Day:Date Modified.

I also want to be able to show the lead based upon the last time an email or call was logged to the lead and the modified date is not accounting for this. Can this be calculated?

That would be a bit more complex as you would be looking for a Last Related Activity Date. 
For this you have several different options: 

1 - Have a look at this approach using our legacy workflows. 
2 - Build a similar approach using SugarBPM 
3 - Consider this plugin published in SugarOutfitters
