I set a list view on my company Dashboard and my CEO (who has access to everything" is not seeing all the fields).

Eventually your CEO is assigned to a Role which has restricted access to those fields.
Double check that.
After removing him from such Role run from Admin -> Repair page the action "Repair Roles"
