Has anyone successfully created a doc merge template that includes the part number?
I've copied what is on the examples provided here Sample Doc Merge Templates - SugarCRM Support Site. the tag should be {mft_part_num}, but I keep getting an error saying it cannot be found on quotes,
any advice?

I have not personally created a doc merge template including the part number, but I confirmed the example from your cited KB article for the Quotes module successfully populates the {mft_part_num}. Are you encountering an error when using that exact template or does your template have additional modifications?

I think they all look fine, have also compared this against my live template which works fine, this one is a little different. Must be something I am missing.

The issue is that mft_part_num comes from the products table and you aren't instantiating that reference until the Quantity column. Try moving the {#products sort='position:asc'}{@index}. text from the Quantity column to the Line Item column so that text reads as:
{#products sort='position:asc'}{@index}. {mft_part_num}
