Currently, I have this formula isInList($recruiment_stage_c,createList("Clinic Interview")) and we want also to include "Closed Lost but it should be (OR) so either clinic interview or Closed Lost. This will make the field required when users choose either of the two.

To account for additional dropdown values returning a positive match, you should add them in to your createList array. The formula should look like this:
isInList(
$recruiment_stage_c,
createList(
"Clinic Interview",
"Closed Lost"
)
)
